Primary Purpose of Position

 

The Pastry Chef de Partie is responsible for collaborating with the Pastry Chef and Culinary team to provide fresh, seasonally appropriate offerings to the Guests at The Ranch at Rock Creek. This role directly assists the Pastry Chef in execution of daily offerings for all meal periods, special events and guest requests.

 

Essential Duties and Responsibilities

 

  1. Consistently executes pastry recipes in accordance with the property standards.
  2. Ability to work independently or in collaboration with the pastry/culinary team.
  3. When required, participates in sorting and putting away inventory.
  4. Works with chefs to learn and execute standard baking and pastry recipes.
  5. Communicates regularly and effectively with Executive Chef and Pastry Chef.
  6. Demonstrates flexible and efficient time management and ability to prioritize workload.
  7. Meets departmental outlined times for task and product completion.
  8. Performs work in a safe and high quality manner, ensuring sanitation practices, standards and regulations are met.
  9. Complies with laws, ordinances and regulations governing food preparation, service and disposal.
  10. Assist with inventory management.
  11. When required, meets with chefs and FOH management to discuss special occasions such as parties and banquets.
  12. Ensure correct rotation of inventory and items.
  13. Collaborates with Culinary team to plan and execute recipes, taking into account such factors as seasonal availability of ingredients and the likely number of members and guests.
  14. Ensures the quality of products received and served meet the standard of the property. 

 

Education/Experience

  1. High School graduate or equivalent.
  2. Some level of professional baking via culinary education preferred.
  3. Valid driver’s license
